Summer Linguine for me, from
Super Natural Every Day. Grated zucchini and cheese with a half whole grain pasta (we used angel hair). It's an interesting way to use zucchini, which we'll all have way too much of in just a few short weeks. One minor issue - the zucchini clumped quite a bit, which you can see in the photo. Next time, I'd like to try to get a bigger grate on it somehow to try to distribute it more evenly.
